Trained at a traditional patisserie in Kyoto, then at a Seattle bakery collective. Blends Japanese fermentation with Pacific Northwest ingredients.

House-fermented white miso (90-day). Maple from Butternut Farm, Vermont. Valrhona Caraïbe 66% chocolate.
